Shiso, also known as perilla, is an herb that is most notable in Japanese cooking and nouvelle California cuisine. Related to basil and mint but with its own strong complexity, shiso is used in sushi, tempura, salads, dipping sauces and as a wrapping for grilled meats. There are two types of shiso: red-leaf (aka-shiso) and green-leaf (ao-shisho). While both varietals taste the same, aka-shiso is most often used as the coloring agent for umeboshi (Japanese pickled plums). Shiso is readily available is Asian markets.
