Fregula (or fregola), also known as Sardinian Couscous, is a specialty pasta from the Sardinian region of Italy made from semolina flour and water. Similar to couscous, Fregula is firmer and coarser grained. Traditionally this pasta was sun-dried, but today you can find it toasted. Fregula can be used in soups, baked pastas and pasta salads.
